Real Simple magazine is the consummate fall/winter dish, combining the seasonal squash with a soul satisfying risotto. The ingredients are very basic and the preparation is relatively easy, but if you have never prepared risotto before, be advised that this is a hands-on dish. In fact, you may work up a thirst with all of the stirring involved.
So what wine are you going to have with this? As the recipe calls for a cup of dry white wine, you may wish to lean in this direction and select a dry white wine to use in the recipe and bring to the table. It makes for a nice bridge. Between the sweet butternut squash and the rich creaminess of the risotto, a medium-bodied chardonnay will work very nicely…even better with a touch of toasty oak.
