Cider-glazed Lamb Chops
Lamb purists may be hard pressed to go beyond the classic rack of lamb with Bordeaux combination, but this recipe from
Bon Appetít invites experimentation with an Asian twist. While the dish uses classic lamb chops, this recipe suggests that one pay closer attention to the wine pairing because of the preparation. There are a myriad of pungent flavors in the glaze from the garlic and rice vinegar to the fresh minced ginger and scallions. In addition, there is the yin of sweetness between the apple cider and the honey that plays against the yang of saltiness of the soy sauce. The result is a wonderfully flavorful gamey meat that will pair beautifully with a New World red such as a big fruit-forward Shiraz from Australia, an equally big Zinfandel from California, or a classic California Cabernet Sauvignon.
